The Charmat method is a natural fermentation technique which makes use of selected yeasts to ferment sugars into alcohol and carbon dioxide. The first phase of fermentation is carried out in cuvées. This method involves fermentation in a large tank, or "autoclave", that is able to withstand pressures up to 10 atmospheres. After the wine is fined, racked, and filtered, it is ready to be put into the autoclave with selected yeasts and sugar. The fermentation takes 20- 30 days. The sparkling wine is kept in low temperature refrigeration which causes the precipitation of tartaric acid. It is then filtered once more and bottled.
