Description
Sweet like candy, prickly pears grow on top of the flat paddles of the Opuntia cactus. Their juice makes them a popular pick for making jam, candies, cocktails and salad dressing, but first the skin must be removed. Simply slice off both ends of the pear and then make a long vertical slice. Peel back the skin away from the flesh and discard. To extract the juice, pulse the flesh in a food processor and then strain out the seeds.
