  • Arrange the charcoal in half of the grill and heat for 30 minutes or heat one side of the gas grill for 10 minutes with the lid closed. Season or marinate as desired and sear meat over the heat for 2 min/side, then move to cool side. Cook for 20-30 min with the lid closed. Keep air temp in the chamber at 350-375 degrees F. OPTIONS: Braise, Stew, Slow Roast or Baste after 15 minutes remove when 150 degrees F internal temperature.
