  • Dust meat with seasoned flour. Heat 2 Tbsp oil in a large skillet over medium heat. Brown meat on all sides. Wipe oil from skillet. Add 1/2 cup beef broth or 1 can of seasoned diced tomatoes. Season as desired. Cover tightly. Simmer gently over low heat 2 1/2-3 hours until tender. Do not boil or meat will toughen. Add vegetables during the last hour.
