Ingredients
All Natural Spices (Including Cayenne, Black Pepper and Parsley), Salt, Garlic, Onion, Other Herbs and Spices.- You'll Need: Cajun's Choice Jambalaya Seasoning Mix; 1 1/2 lb boneless chicken (cut into bite size pieces), and/or medium uncooked, cleaned shrimp; 1 lb smoked sausage, sliced (Kielbasa works well); 1 8 oz can tomato sauce; 2 cups chopped onion; 1 cup chopped bell pepper; 4 cups chicken broth; 1 cup chopped celery; 2 cups long grain rice (uncooked). Brown sliced sausage and chicken in 6-8 qt pot (if needed use 2 tbsp butter to prevent chicken from sticking). Remove sausage and chicken from pot and set aside. Saute vegetables in approx 2 tbsp sausage drippings (or butter) on medium heat for 15 minutes. Add broth, tomato sauce, sausage, chicken and jambalaya Seasoning Mix. Bring to a boil. Add uncooked rice. Cover and simmer 5 minutes. Stir well. Cover and cook over low heat an additional 45 minutes. If using shrimp, stir in during the last 15 minutes of cooking Serves 6-8.
