  • You will need: 2 cups cold water. Microwave: Most convenient! 1. Pour potatoes into 1-1/2-quart microwavable casserole dish or bowl. Stir in 2 cups cold water with whisk until moistened and well blended. 2. Cover with microwavable plastic wrap; fold back 1 side to vent stream. Microwave on high 3 to 4 minutes or until hot. Dish will be hot! Stir until smooth. Refrigerate leftovers. Note: Low-watt microwaves may require 1 minute longer. Stove-top directions: richer, creamier texture! Heat 1-1/2 cups water to boiling in 2-quart saucepan. Remove from heat. Stir in 1/2 cup milk (if prepared with skim milk, 1 serving provides 90 calories, 550 mg sodium, 19g total carbohydrate, 3g sugars, 3g protein and 4% calcium) and potatoes with whisk just until well blended. Let stand about 1 minute or until liquid is absorbed. Stir until smooth. Refrigerate leftovers.
