recipe categories / soups / poultry-soups Turkey Wild Rice Mushroom Soup Courtesy of My H-E-B Texas Life Magazine Ingredients: 2 tablespoon H-E-B Extra Virgin Olive Oil 1/4 cup H-E-B Imported Brown & Wild Rice 1/2 cup H-E-B Ready, Fresh, Go!® Chopped Onion 2 H-E-B Ready, Fresh, Go™ Garlic Cloves, chopped 1 container (32 oz.) Central Market Vegetable Broth, regular or reduced sodium 1 package (10 oz.) Central Market All Natural Porcini & White Mushrooms with Spinach 2 cups chopped turkey salt and pepper 2 cups H-E-B Restaurant Style Seasoned Croutons 1 cup H-E-B Shredded Swiss Cheese Directions: 1 Heat a large soup pot over medium heat. Add oil, rice, and onions and stir-fry for 3 minutes until onions are golden. Add garlic and stir-fry for 1 minute. Add vegetable broth and 2 cups water. Bring soup to a boil, reduce heat to medium low, and cook for 20 minutes covered. 2 Add mushrooms and spinach and turkey. Increase heat to medium and cook for 5 minutes uncovered. Season to taste with salt and pepper. 3 Top each serving with 1/4 cup croutons |
