recipe categories / salads / potato Smokey Mustard Potato Salad Courtesy of H-E-B cooking Connections Ingredients: 1 lb. small new potatoes, size "C" 1/4 cup chopped green onion 1/4 cup chopped dill pickles 1/4 cup Fischer & Wieser Sweet, Sour & Smokey Mustard Sauce 1/4 cup regular or low-fat mayonnaise Directions: 1. Place potatoes in a 2-quart pot and cover with water. Bring to a boil over High heat. Reduce heat to Medium; boil 20 to 30 minutes or until tender. Drain and set aside until potatoes are cool enough to handle. 2. Meanwhile, chop green onions and dill pickles. 3. Cut potatoes into 1-inch cubes; place in a medium bowl and toss with onions and pickles. 4. Combine mustard and mayonnaise; stir into potato mixture. Refrigerate until chilled or serve warm. |
