Classic Rice Salad

Ingredients:
3 cups cooked rice, cooled
3 hard-cooked eggs, chopped
1/2 cup reduced-calorie mayonnaise
1/2 cup finely chopped green onions
1/2 cup chopped sweet pickles
1 (2 ounce) jar pimientos, diced
1 teaspoon prepared mustard
1/4 teaspoon ground black pepper
lettuce leaves (optional)

Directions:
1. Combine, rice, eggs, onions, pickles, pepper, mayonnaise, pimientos and pepper in large bowl. Toss to thoroughly combine.

2. Chill, serve in lettuce leaves, if desired.
