recipe categories / seafood / shellfish Shrimp Fiesta Fajitas Courtesy of Mission Foods Ingredients: 4 Mission® Soft Taco Size Flour Tortillas 2 tablespoons lime juice 2 tablespoons soy sauce 2 tablespoons fresh ginger, minced 2 tablespoons garlic minced 1/4 teaspoon Tabasco sauce 1/8 teaspoon black pepper 1 pound Medium Shrimp, peeled & deveined 2 tablespoons vegetable oil 1/2 red, yellow or green bell pepper, thinly sliced 1 small onion, thinly sliced 2 small tomatoes, seeded & chopped Directions: 1. Blend first seven ingredients together, except tortillas. Then add shrimp. Cover and place in refrigerator for 1 to 2 hours. 2. To serve, heat 2 tablespoons oil in skillet. Sauté peppers and onion until soft. Add shrimp and tomatoes, sauté just until shrimp turns pick. Do not overcook or shrimp will become tough. 3. Serve with warm tortillas. |
