recipe categories / seafood / shellfish Shrimp, Pears & Sugar Pea Sauté Courtesy of California Pear Advisory Board This quick-and-easy entrée combines the freshness of shrimp, the sweetness of pear slices and the crispness of sugar peas. It's the perfect dinner for a hectic weeknight. Serve it over steamed rice or Asian noodles for a complete meal. Ingredients: 2 each shallots, thinly sliced 2 teaspoons olive oil 1 pound medium shrimp, shelled and tails removed 1/3 pound sugar peas, trimmed 2 California Bartlett pears, cut into 1-inch wedges 3 tablespoons dry white wine 1 tablespoon unsalted butter 2 1/2 to 3 tablespoons fresh orange juice salt and pepper, to taste Directions: 1. In a large skillet, cook the shallots in the olive oil over Moderate heat for 3 minutes. 2. Add the shrimp, sugar peas, pears and wine and cook 4 minutes, stirring occasionally, until the shrimp is almost done. 3. Add the butter and orange juice, and cook 1 minute. Season with salt and pepper and serve immediately. |
