recipe categories / pasta main dishes / meat-pasta main dish Turkey Pastrami and Pasta Salad Courtesy of National Turkey Federation Ingredients: 3/4 pound turkey pastrami, cut into 1/2 inch cubes 8 oz. rotini, cooked and drained 1 can (14 oz) artichokes, drained and cut into quarters 1 cup chopped carrots (2 medium) 1/2 cup chopped onions (1 medium) 1/2 cup chopped celery (1 stalk) 1 can (4 oz) black olives, drained and sliced 3 tablespoon olive oil 3 tablespoon white wine vinegar 1 1/2 teaspoon minced garlic 1/2 teaspoon salt 1/2 teaspoon pepper 6 lettuce leaves Directions: In large bowl, combine pastrami, rotini, artichokes, carrots, onion, celery and olives. In small bowl, combine oil, vinegar, garlic, salt and pepper. Toss together with pastrami mixture and refrigerate for 1 hour. Serve on lettuce leaves. |
